Roasted Veggie Tart



What does someone do when unemployed and getting settled as an expat in London?

You learn how to cook. Like for real cooking.

Here you will see my latest creation: Roasted Vegetable Tart.


I had never made a tart before. I also did not and still do not own a tart pan.  I went with a cake pan and it worked just fine.

The Roasted veggie tart consisted of the following: onion, sweet potato, red and yellow pepper, button mushrooms, zucchini and a delicious ricotta, parmesan and rosemary filling.

I got to admit for my first one it was pretty tasty.
